The Green Salad with Creamy Ranch Dressing


We all know that we need to eat our greens but don’t settle for soggy broccoli, my green salad offers a delicious range of crunchy greens paired with filling quinoa and a deliciously creamy ranch dressing.


The Green Salad with Creamy Ranch Dressing

Serves 4 as a main or 8 as a side

Nutrition – A super healthy salad, but maybe take it easy on the dressing!

As a main, this recipe provides:

Calories: 354     Carbs: 40g     Protein: 13g     Fat: 16g


The Green Salad:

  • 150g Broccoli (cooked)
  • 100g Cucumber (sliced)
  • 150g Quinoa (dry)
  • Juice of 1/2 Lemon
  • Handful of Cress
  • 200g Edamame Beans
  • 1 Medium Avocado – Approx 140g
  • 100g Spinach

Creamy Ranch Dressing:

  • 1 Tbsp Fresh Chopped Chives
  • 1 Tbsp Fresh Chopped Dill
  • 2 Tbsp Vegan Mayonaise – I highly recommend ‘Veganaise’
  • 1/2 Tbsp Olive Oil – I’m using a garlic infused olive oil
  • Juice of 1/2 Lemon


  1. First we are going to cook the quinoa, add 350ml of water to a saucepan and bring to the boil. Add the quinoa and lemon juice to the pan and cook on a medium heat for 10-15 minutes until fluffy. Once the quinoa has cooked set it aside and leave to cool.
  2. Whilst the quinoa is cooling, we are going to prep our vegetables. Chop, dice and slice your vegetables to your liking and add them all to a large salad bowl, use your hands to toss the salad and incorporate all of the ingredients.
  3. Once the quinoa has cooled add this to the bowl and give the salad a good mix again.
  4. To make the salad dressing, simply add the finely chopped herbs to vegan mayonnaise, squeeze in lemon juice and drizzle over the olive oil. Stir until combined.
  5. Just before serving, drizzle the dressing over the salad and you’re done.
