What better way to start a Sunday morning than waffles? These waffles are high carb, low fat and packed with protein. The perfect pre or post workout meal too. Delectable but not naughty! We topped the strawberry half of the batch with berries and maple syrup and the chocolate half with banana, butterscotch and cacao nibs.
Vegan Protein Waffles
Makes 4 waffles
2 Cups Almond Milk
2 Ripe bananas
2 Scoops of Protein Powder (optional, we used strawberry and chocolate)
3 tsp cocoa powder (to make chocolate waffles)
Toppings of your choice.
1. In a blender whizz 160g of oats into a flour.
2. Pour in the almond milk followed by chunks of ripe banana and protein powder if you choose to use it. If making chocolate waffles also add cocoa powder. Blend until a smooth batter is achieved.
3. Preheat your waffle press. When your waffle press is the correct temperature pour over ¼ of the mixture and close to cook. These waffles took a little while to cook but be patient they are so worth it.
4. When cooked the waffles should be crispy on the outside and fluffy on the outside. Add toppings and serve immediately.
